When Michael Friedman and Greg Augarten, students at Tulane University in New Orleans, got a yen for New York- style pizza like the kind they grew up on, they did something a little unusual. They figured out, with no professional culinary training, how to make it themselves and went on from there.
Starting as a Sunday-only popup in a window of a cooperative kitchen in the Bywater and quickly developing national attention for its thin-crusted, pliable pizza and innovative pasta dishes, Pizza Delicious is truly an entrepreneurial success story. Pizza Delicious in the Bywater has been in its funky brick space at 617 Piety Street for a year now, and now you don’t have to wait at a window for that wonderful pizza.
The tomato sauce is fresh, the basil is chopped just-so, the mozzarella is tangy, and the crust, well, it’s just something you have to experience. Slow-fermented and flavorful, it’s why you eat pizza. The atmosphere at Pizza Delicious is festive and hipster, but don’t feel you have to be a tattooed Bywater resident to enjoy it. Now there’s an outdoor patio space as well, both family and date-friendly. The wine selection is limited but thoughtful and the beers—from specialty microbrews to $1 PBR specials on occasion–flow freely.
Did you say hot sausage-caramelized onion pizza? Oh, and the garlic knots have quite a following. And the Caesar salad. Raved about in Food and Wine, Garden and Gun, Huffington Post, USA Today, and on and on.
From the Author: Pizza Delicious is a poster child for the current New Orleanian entrepreneurial spirit, but it’s accessibly low-tech. The ingredients for this start-up are just flour, water, salt, and yeast, mixed up by a couple of young dudes from New York who wanted to make delicious pizza.
