I had heard about a new butcher shop opening in town from my neighbors a while ago.  I didn’t have a chance to stop in and check out JM Stock Provisions until recently.  Am I sorry it took me so long!  James Lum and Matt Greene, the owners and butchers, have some of the best beef, pork and poultry in the area. Originally from Virginia they both honed their butchery skills in Brooklyn NY before opening their shop here.

They believe in whole animal butchery – processing the animal from head to tail.  So yes they make their own headcheese and sell oxtails.  They purchase the beef and most of their pork from the farm across the street from us so I knew the quality would be great even before I tasted some of their products.  They believe in sustainable, local agriculture so all of the meats, produce and goods they sell must follow those principles.

I was looking for some locally produced bacon that was not over-smoked which would make a nice breakfast bacon.  Theirs does.  They also make a beef bacon for those who do not eat pork but still want the pleasure of eating bacon.  They make and smoke their own sausages – including kielbasa, andouille, breakfast and a butternut squash/bacon sausage.

In February 2014 they are offering a class on sausage making which I just might have to attend.  They also have classes on pig butchery if you are so inclined.
