Description:

The barrel room has twenty five bins filled with fermenting grapes. Steve and crew have beat their brains out getting all the grapes picked, loaded into the bins and covered for fermenting. Now there is the slow process of punching down the bins. That is how the grapes ferment in the bins: they rise to the top and get pushed (punched) back down into the liquid for further fermenting. Steve Ryan, owner/winemaker, babysits the bins during this laborious process.  Oakstone Winery has spent weeks testing the readiness of the grapes’ sugar and acid balance to make certain they are just right for picking. Then they picked the hundreds of rows of vines, with thousands of individual grape vines and millions (well maybe not literally millions, it only seems that way to the pickers) of clusters of grapes. For those in wine regions this time of year the activity is affectionately called “The Crush.” The harvest is over and it is now time to enjoy a Harvest Moon and celebrate the bounty of the efforts of the last few weeks.
