Hope Spring Farm is a Mennonite-Owned, organic cheese maker in northern Lancaster County.  Their cheese and whole-foods shop is open six days a week:  Monday – Friday 7 am – 8 pm, Saturday 7 am – noon, Closed Sunday (and religious holidays).

The owner of Hope Springs Farm, Lauren Weaver, is a strong proponent of organic practices for every aspect of his business.  He grows fields of pesticide-free grass where his Jersey cows feed (when possible).  The cows are raised without hormones or antibiotics as well.  He believes that not only are his organic foods better for you, but they taste better too!

In their shop they sell a variety of raw milk cheeses, including cheddar, jack, baby swiss, yogurt, sharp cheddar, and colby.  They also sell other whole foods including eggs from free range chickens, raw milk, flour, syrup, honey, noodles and other “staples”.

If you’re lucky and Lauren is around when you stop in, he’s happy to show you around, tell you about the farm, and especially tell you about ORGANIC growing and why he feels it’s so important.  Hope Springs is able to ship products, but they prefer for customers to pick up.
